Wisconsin is leading in Cheddar production, which makes it no surprise that this Cheddar is one of our most popular cheeses. Having been aged for 3 years to achieve the perfect balance of sharpness, this cheddar was worth waiting for.  It has a sharp cheddar flavor with a few “crunchy” calcium lactate crystals starting to form within the body of the cheese. It has a firm, somewhat dry, crumbly texture that has fruity notes with a floral finish and takes on a more robust cheddar flavor.
