This sheep's milk cheese was born in the town of Moliterno, however as time passed the supply of sheep diminished, so the production was transferred to Sardegna where the sheep were easy to come by. The Central family maintains the tradition of using Giunco baskets and the preserved techniques for processing and aging. This 5 month old table cheese is the most widely used of all cheeses on the island. It has a rich, savory taste that gets sharper with age.
