Ombra is a pasteurized sheep’s milk cheese from Catalunya aged a minimum of 4 to 5 months. The flavor stands apart – it really tastes like no other Spanish sheep’s milk cheese. It is full flavored yet it has a sweet, lingering finish. Often there are crystallized proteins in the cheese as well, reminiscent of a sheep’s milk Parmigiano. Truly distinctive.
