Lovely caramel colored with a golden interior and tiny eyes, San Simon is a smoked cow’s milk cheese from Galicia in the shape of a teardrop. The subtle smoked flavor comes from aging the cheese on birch wood. Only four producers make the cheese; this one is artisanal.
