Also know as Brebicet, the d'Affinois Brebis is a melt in the mouth variety made from sheep’s milk with its own unique taste. It is a soft, soft-ripened sheep's milk cheese from the Rhone-Alps region in France. Produced by the renowned Guilloteau creamery, it is very similar to the other sheep milk bloomy rind cheeses produced by the same company. The paste is mild and rich while the rind provides a flavor and texture that is savory and builds complexity.
