This farmhouse sheep’s milk cheese from Emilia Romagna has been aged in walnut leaves in ventilated caves to give it a particular perfume and flavor. Walnut leaves ripen only twice a year thus both production and availability are limited. Wonderful paired with artichokes and raw vegetables.
